We've been using these in our kitchen for some time and never had any issues. We do some baking but aren't a bakery - mostly use for ease of convenience/clean up when roasting.

We have been buying parchment sheets from Webstaurant for several years. Lately we have been having issues with product sticking to the paper even when we spray it with baking spray. It started a few months ago about the same time the brand changed. Will not buy again until they figure this out. Also the method of packing and shipping seems to be all over the board. Sometimes they are in neat flat boxes, other times the box had opened and it is thrown into larger box were the paper gets crumpled and creased.

I wished I'd listened to the other 1 star reviews on this product, but I wanted to see for myself. I regret it. As with the other bad reviews, we have issues with products sticking to this parchment paper. One review said for dryer items, like cookies, they did OK and would release. We are a gluten-free bakery, and often gluten-free is a wetter dough or batter. I'm making do with these for certain things that will release without ruining the product, but I'm going back to my local supply store to buy the Quilon coated sheets that I've been buying for years. On those, I've actually been able to flip the sheets and use the reverse side when making my rolls. These are very much single use as they are thinner and become very crispy after baking. But just this morning my wife said she's been spraying the sheets to get the cookies to release. So we're done with these other than I'll use them for my rolls to use them up.

Not eveven worth the cheap price. To keep product (bagels and cinnammon rolls) from sticking and being torn apart to get them off the paper, you have to spray with food release or use a lot of corn meal between the paper and the product.

I purchased these to use for my bakery. Assuming they were good (because why wouldn’t they be?) I used them and ruined about half my orders for the day. Complete waste of money and ended up costing me so much more in time and sales. Would NOT recommend.

For certain baked goods that were drier, like sugar cookies, they came off of the parchment easily. However, anything else that had any sort of moisture (blueberry scones, for example) completely stuck to the paper and had to be scraped off. I would not recommend these sheets for anything other than the driest baked goods.

Apparently another user had a similar experience based on the reviews. This parchment paper sticks to sourdough like superglue. Unfortunately I can’t use this for half of my production needs and will need to find another parchment for my loaf pans.
