Aluminum bun pans are lightweight and great heat conductors. Stainless steel pans are the most durable, but are not the best conductors of heat. To combine the great qualities of both materials, try an aluminized steel sheet pan. Some pans also feature a convenient non-stick coating so you can easily release foods from the pan. Sheet pans with a wire enclosed in the rim increase their durability and keep the pan from warping. Similarly, some pans are reinforced with a metal band for even heavier duty use.
